Also, I found out that, once I change the INSTRUMENTS OUT from stereo to mono on (about > settings), and I route that out to an audio track in Ableton Live 7, the audio that comes from the nepheton is still in stereo. Why?

And it works as far as I know, eg Cubase (it shows them as a mono tracks and processes only single signal path), but unfortunatelly I don't know how does it work in Ableton Live, so I'd need any other VSTi to compare ... but I've already remembered - NI Battery (it's possible to configure outs as a mono), I'll check it tomorrow in office

I've just checked Battery under Ableton Live 7, and it behaves as Nepheton does. Seems that Live doesn't indicate if any channel is mono or stereo (I mean VSTi's output). When I configured Battery's output to mono, in Live I had the same stereo VU meter, Nepheton acts exactly. The only hint for me was the name of output with "mono" postfix, which was set by Battery, not by Live.
